This version uses the "impossible pie" method, instead of using a pie crust. It turns out very well using brown rice flour instead of all purpose flour to create a gluten free entree. The flour and baking powder form a thin, crispy outer layer. It does change the texture of the quiche, but it is still very good.
I swapped out Bison for Hamburger & changed some other ingredients from a 'Cheeseburger Muffin' mix I found.
Best served with one fresh crispy apple -diced. And cold soy or other non dairy milk. mmmmmm. No need to soak overnight, just serve and eat.
You may substitute Blueberries, pecans, carob chips etc for chocolate chips - or leave the muffins plain
This is my go to for make ahead breakfast. I cut it into 4 squares and refrigerate in plastic bags. I take them to work and heat them for 30-40 seconds.
