I used tapioca pearls from the regular market and only soaked them for one half hour. The health food store variety may need an entire hour to soak. You want them soft when squished, but to hold their shape when you stir them.

Wonderfully moist, flavorful muffins! I used buttermilk powder in this recipe and added it to the dry ingredients & the water to the liquid ingredients. Try using mini muffin pans to make a smaller serving size.
