I adapted my favorite zucchini bread recipe, by substituting silken tofu and 0 calorie sweetener in place of eggs and sugar.
Also added chocolate chips in place of chopped nuts!
This recipe was made by Matt and Justin for Life Skills class at West Geauga Middle School. The original recipe called for the balls to be fried in oil, but they're great if you just bake them and that makes them healthier too!
These are delicious and low calorie! Try them out! I will also add lowfat frosting options! Look for them!
I adapted this directly from an 18th century recipe that was made in a skillet. I think of it as a gluten-free version of apple pie that you can just spoon out. Best served warm.

the nutritional value doesn't include the crust as I never eat the crust. You can bake it in a crust, or bake it without the crust, your choice.
