The butterscotch chips were an addition per request of my family; the cookies can be made without them with no problem, or substitute the cinnamon chips for them!
These are great to take the place of icecream on a hot summer evening. Not hard to prepare!
3/4 C Butter
1/2 C Sugar
3/4 C Brown sugar
2 Eggs
1 C pumpkin (canned or cooked)
1C Oat flour (or other whole grain)
3/4 C White flour
1/2 C Pecans, chopped
1 1/2 t Cinnamon
1 t baking soda
1/2 t salt
1/4 t nutmeg

Made from Mom's ***Dad's Cake*** recipe, modified. Used to use shortening, in stead of butter, and was made in a pan. I'm using these as little cake-ettes and serving them with fresh strawberries.

This is an unconventional dessert given me by my weight watchers leader. It has no flour, using chickpeas to bind instead. Importantly, after cooking, this must be frozen solid, then thawed for 10 minutes before serving. I love it, and my kids have given it the stamp of approval :o)
