This is a combination of a number of recipes I found on the internet. I was trying to find something similar to Pascal Manales BBQ Shrimp which is amazing! This was good for sure, not quite what I remembered but still very good.
My daughter made this up after looking for a recipe like one she saw with roasted beets. This was really good!
I decided that I can make my own Indian Food, low calorie and DELICIOUS. Feel free to add the potato that it usually has in it. I think you will love it.
Have changed the ingredients and portion size to be a bit more healthy! A serving is 1/2 a chicken breast and 1/2 c of stuffing.
I made this up while trying to come up with a way to get one serving of grain, two or three of veggies and a dairy into a single dish. Not sure if it counts as a full protein serving (depends on your dietary needs), but the quinoa is relatively high in protein, too, which is nice.
I'm having it in my lunch today, but it would make a nice dinner as well.

This was made for our Christmas dinner. It is a nice less salty way to have ham, that is nice and tender.
