When I am missing my favorite take-out "Super Fries" from the drive through in San Diego, I make my healthier version with barbecued chicken instead of beef. You can reduce the fat by omitting the avocado.
I saw those cauliflower pizza crust recipes and thought to add a shredded potato which made it so yummy, but nothing like pizza crust. I used it as a sandwich and it was a lot of fun. I will be buying a lot more cauliflower from now on.
I thought I would be making this only for myself, but my boys say that they like it as much as fried chicken, so I have to make larger and larger batches.
Top pancakes, or top with granola and nuts, or even fill a tiny pie :)

Everything I love about a basic hamburger, only in salad form. Just as good as the sandwich in my opinion.
They taste more like French toast then pancakes, but who doesn't like French toast?
