This recipe is based on one from Company's Coming"Soup and Sandwiches" . I've made a few adjustments, using coconut milk rather than cream, and I also use a little less onion than the original recipe.

This is a friend of mine's recipe. She uses all chicken, I used half the amount and added veggies. I had turnip and carrots in the house. This would also be good with green beans.

These stuffed bell peppers are simmered in a coconut sauce. Serve with brown basmati rice (optional). Look for the small variety of bell peppers at an Indian grocery,rather than the larger ones, if possible. Yellow or red peppers can be substituted

This is our own adaptation of a recipe originally from 101 Cookbooks. The celery and fennel seed are a substitution for bulb fennel. It was intended to be eaten hot; we prefer it as a light, delicious cool summer dish. We're also large portion people - yours might go further.
The fat content can be reduced by reducing the nut content.
I've used safflower oil instead of ghee because I tend to have safflower oil on hand usually. It's pretty flavorless, so it doesn't really hurt anything. Sometimes I add in a bit of skim milk at the end to fill out the flavor.
