healthy curry! YUM! All of the ingredients are estimates, add/subtract to your liking. Sometimes I use cauliflower instead of broccoli.
This oatmeal is made with a chai tea bag in the mix... makes for GREAT spiced oatmeal with peaches and sweetened only with honey!
I made this up with the veggies I had left the day before my grocery run... turned out AMAZING! I love the contrast of the mint against the curry... :D If you want a cooler salad, just wilt some fresh spinach instead of heating the frozen, then let it come to room temp before serving.

My adaptation of this recipe from All recipes.com. If you substitute tomatoes for the yogurt it is lower in fat and calories, but the yogurt version tastes better. I make it a bit less spicey for my kids. It is really good served over rice.
