Combining two classic Italian dishes, Baked Ziti & Chicken Parmesan, into one light version that still packs in the flavor. Entire meal can be prepared in 30-40 minutes using back to back baking times and some lightfootedness in the kitchen. Will fulfill any dieters need for pasta. Very versatile as well, you could throw in some of your favorite veggies along with the chicken such as steamed spinach, baby zuchini and carrots, brocolli, string beans, or red peppers. For variation, just toss veggies in the oven with the chicken, and layer inside of or onto with the chicken.
A great alternative to creamy, spicy vodka sauce made with beans! I like a lot of sauce, so I only got two servings out of this, but if you like less you can easily get four. Can also be thinned out with extra marinara sauce, water, or tomato juice if you like thinner sauce.
Being that it's just me here at the house, and a whole lasagna is way over kill, I made these and froze them into little individual servings, two to a package, so I can just bake them and go!
6 medium whole (2-3/5" dia) Red Ripe Tomatoes
2 cup Hunt’s Tomato Sauce, no salt added
.5 medium (2-1/2" dia) Onions, raw
6 tsp Garlic, Minced in water (by TSM1991)
16 oz Beef, 90% Lean Ground Beef from Sirloin
2 link, 4/lb Italian Sausage, pork
0.5 can (6 oz) Tomato Paste

Super easy dinner, and one of our favorites. Nutritional info is for basic sauce, part skim cheese, and regular pasta, so there is a lot of room to cut calories on this one. Add garlic, onion and your favorite seasonings for even more taste.
Serve as accompaniment to grilled meat and/or veggies as an alternative to alfredo.
