This is a variation of the pizza dough recipe found in Joy of cooking.
This is a South Beach "makeover" of a casserole my family loves. Basically, I swapped out the high fat and high carb items for more diet-friendly versions. All of the ingredients are cooked before they are put in the casserole, so it is easy to defrost and reheat.

I bought pizza yeast and making pizza dough is a breeze in my kitchen aid. No rising needed. Use whatever veggies you like.
An easy way to make a healthy meal on a hot summer night without heating up the kitchen with the stove
This is a great snack for kids and adults I love to make it in the summer because is very refreshing. You can put sweetener instead of sugar and also can add some dry white wine if you make it only for adults.
Chicken breast, broccoli and diced tomatoes seasoned with Italian dressing -- cooked together in foil packet.

The origins of pesto are somehow uncertain but some historical letters found in the archives of Genoa (Liguria) mention a dressing called "battuto d'aglio" (literally battered garlic) back in the 1600's. Basil has been known to all the Mediterranean people since the age of the Romans, probably originating from the northern coasts of Africa.
