Round 2. My original idea was to keep it light, but after seeing our Facebook Support Group members creative toppings, I caved and made a Pepperoni Pie! WOW. The secret to this recipe is a Screaming Hot Preheated Oven... otherwise your chicken crust will steam and there will be lots of liquid and not a lot of browning. THIS RECIPE IS OFF THE CHAIN!
This dip mix is prepared according to package for Baked Artichoke dip using 1 packet of mix (Tastefully Simple artichoke and spinach warm dip mix), 8 oz cream cheese (i used neufchatel cheese to save fat calories), 1 cup swiss cheese and 14 oz can artichoke hearts drained chopped (canned in water)

These are great when you're not really wanting to eat meat, but are a meat eater. Fresh herbs are best in this recipe! I serve them with pasta and a tomato sauce. I bet they'd be great in a sub sandwich or in a pita.
The servings are per meatball. This recipe should yield 3 dozen.
This is sort of a vegetarian spaghetti option. And since I eat gluten-free, I used Tinkyada brown rice pasta, but regular pasta could be used too.
