Risotto IS the reason my husband married me... or maybe my 100 French Toast recipes.. but this risotto can be dressed up 100 ways
I was home sick today and while Pinterest'ing my sickness woes away debating whether I would be trekking to work, I found this picture of Lasagna Soup (original recipe featured on this foodie blog - www.joanne-eatswellwithothers.com/2012/10/

But the recipe (while very nice and simple) didn't quite ring of "LASAGNA" to me.. in fact it was missing the key part of a good gooey layered treat.. the ricotta cheese and the fresh "mozzarel!".. and then I thought of another recipe featured in this month's Bon Appetit for Ricotta Gnudi and Pomodoro sauce (www.bonappetit.com/recipes/2013/02/ricott
a-gnudi-with-pomodoro-sauce) and this recipe was born... a warm bellyful of lasagna flavors that was perfect to warm my body and soul.
Using a organic Mac and Cheese Mix, I made a delicious and low fat macaroni and cheese!

My recipe. Make a ton when basil is in season and freeze it in ice-cube trays, Then seal cubes in air tight containers.
This is a good zippy homemade version. Lots of flavor. Makes about 18 oz. so this is calculated with a 1 0z. serving size.
At the end of the season and lots of peppers to use, I decided to roast the entire lot. This recipe was one of the ways I utilized the wonderful flavor of roasted red peppers. So rich and delicious. Serve over brown rice (not included in nutrition information).
