I make this easy dish often on cold winter days. This is a wonderful comfort food and easy on the calories! The auroma alone is delicious.
I calculated this and it comes out to 2.6 points per serving if you're cutting it into 12 servings. I made it higher to make sure I'm right.
I have been making this for years and granted the calories and fats are higher, I make this recipe when the rest of my day has been pretty low calorie and it goes great with some whole wheat french bread and a green salad! The kids love it!
Cannelini, or white kidney beans, are used in this Italian recipe. If you can't find fire-roasted tomatoes, any brand of diced canned tomatoes will work.

A delicious, no-meat lasagna that is still high in protein. My friends and family have enjoyed this at parties. It is also good to make at the beginning of the week and reheat the leftovers throughout the week. I hope you enjoy it!
Called Giambotti, this recipe is very versatile. Use most any vegetables. Keeps well all week in fridge. Freezes well.
Traditionally served with Italian bread, but you can add rice, grains, legumes, poultry, or beef for variety or to increase the protein or fiber. Yummy cold too.
