My family loves cheesecake but we are all watching our intake of fats and/or sugars. This recipe is very satisfying and delicious -- and nearly instant. If you want to further lower the fat, use all low-fat or no-fat sour cream and cream cheese; I've chosen to leave a little fat in because the rich taste is so satisfying. You can also add another box of sugar-free/fat free pudding mix (or half of one) to make chocolate or butterscotch "cheesecake". This is a very flexible recipe as far as flavorings and can be changed to please your tastes. Enjoy!
Created from some great lean sausage and veggies from the CSA . This was one pound of very lean hot sausage and I had trouble finding an accurate count for it, but it was all tasty when mixed together. Please feel free to substitute your choice of veggies.

2 3/4 scoops of Healthy n Fit Egg White powder is roughly 1/2 cup. 14 Truvia packs equals 1/4 cup. 32 tbsp of ground flax meal is 1 cup.
I eat these and stay in Ketosis. This program calculates the carbs as 6.7, but subtract the fiber for a total of 4.1 net/effective carbs. That comes from the Truvia, but there is a lot of debate whether Truvia actually affects blood sugar. My ketosticks stay purple.

These cupcakes/muffins are very good and have no grains, so are suitable for a gluten-free diet as well as a low carb one. With 6 grams net carbs per muffin, these treats made a perfect Birthday Cake substitute for me this year!
The original recipe contained converted rice, so I eliminated it and added fresh sliced mushrooms. Instead of White Wine I used a Cooking Marsala to give the dish a bit more depth. I found the Cream of Mushroom Soup Recipe online, which has no flour and can be made a day or two ahead. It's a great dinner for busy days, and with 14 net carbs for a generous adult serving, it makes a great choice for those of us who are watching our sugars and starches.
