This is a low carb Chicken "Casserole" dish. Mayo and cheese hold chicken, peppers and spinach together like a casserole. Very savory! A real comfort food. I make it in small dishes for lunch or snack. Double or triple ingredients to make a family size dish.
This is just the filling for a Tiramisu dessert. Layer with your choice of baked cake(lady fingers, low carb cake, pound cake slices....etc)soaked in a blend of brewed espresso and liqueur.
I was trying to come up with a recipe for left over grilled chicken breast.
Original recipe calls for 1 lbs. of salmon but I substituted scallops because I don't like salmon.

A dose of protein you can make ahead, freeze, and then toss into soup or just microwave, or whatever. Sort of substitutes for poultry sausage. The protein and fiber help you feel full and the fiber helps the protein move through your system. You can use whatever seasonings you prefer.
