A easy Mexican dinner for under 300 calories per serving. You can even assemble it ahead of time and bake before serving.
This is my version of Lazy Woman's Cabbage Rolls, enjoy! This may be a stand alone meal or served with additional steamed veggies.
No additional fat added, savoury and filling. The juices of the pepper make it moist
1.Sauté bell pepper and onion, in half the oil, adding pepper and cumin.
2Add turkey to the veggies with the cilantro and juice of half a lime
3. Put turkey and veggies in tortilla, topping with cheese, distributing evenly and fold in half.
4. Rub remaining oil in a new pan to coat, heat up then cook the tortillas on both sides on medium heat till light brown and cheese is melted.
5. Put on a plate, cut each quesadilla in 4 pieces with a pizza slicer, cut other half of lime in to 3 wedges.
6.Serve with lime wedge, sour cream and Pico de Gallo.
