1.Sauté bell pepper and onion, in half the oil, adding salt, pepper and cumin.
2.Cut up cooked chicken into half inched pieces and add to the veggies with the cilantro and juice of half a lime
3. Put chicken and veggies in tortilla, topping with cheese, distributing evenly and fold in half.
4. Rub remaining oil in a new pan to coat, heat up then cook the tortillas on both sides on medium heat till light brown and cheese is melted.
5. Put on a plate, cut each quesadilla in 4 pieces with a pizza slicer, cut other half of lime in to 3 wedges.
6.Serve with lime wedge, sour cream and Pico de Gallo.
