I've eaten a fattier version of this recipe from Southern Living before and it was called Shrimp and Yam Cakes, but recently saw another version of the recipe in an I Can't Believe It's Not Butter ad so I thought I'd modify it to my taste. I hope you enjoy it.
This is my embellished version of tuna salad. This has a slightly sweet flavor due to the balsamic, and the garlic, cilantro and jalapeno stuffed olives give it a little zest.

I changed the heavy whipping cream to light cream, still tastes really good... too much fat and calories in the heavy whipping cream, lightened this recipe up quite a bit. I used regular eggs, you can try egg beaters, but not sure how it will come out.
Just another version on my quiche, I finally found some lower fat turkey sausage, Honeysuckle White, they are pretty good!
