This is an incredibly light and lucious salad. I recommend seasoning the salmon according to your own tastes. My husband likes to grill the salmon on a Weber Pot, but whaterever your method be sure not to overcook the salmon. You could even add some sliced strawberries, blueberries or peaches to the salad. Be sure to account for the extra calories in the fruit. I like to have my dressing on the side and dip the tines of my fork in the dressing. I get a small amount of dressing with every bite, and usually have dressing to spare. This is defintely a salad you can feel good about eating.
