The goal of this recipe was to lessen the carbs, it is still a high calorie food. At 17g of carbs per cookie (at an estimated batch of 3 dozen), it's not exactly a low carb food either, but can be a nice occasional treat.
Original recipe came from Truvia website. I've made adjustments to suit my taste and hopefully to lower the carbs (I removed the oats the original recipe called for in addition to the flour).
These cookies would probably be even more low carb if I had had an artificial brown sugar, but since I didn't we'll go with what we have.
I ground my own almond flour from raw almonds. I used my food processor and simply ground it up. I understand that a coffee grinder (preferably and unused one) works better.

This recipe contains a little Vital Wheat Gluten but it isn't essential if you're gluten free. It just makes the muffins a little more like regular muffins. High in protein and reminiscent of chocolate cake. Net carbs: 5 / muffin. Recipe calculator doesn't deduct erythritol or sugar alcohols.
