This recipe is a tweak of one of my favorite sauce recipes. The beets form the sauce which turns the dish a wonderful pink/red and uses the beet greens as well.
The dish is a brilliant pink.
Using up ingredients I had on hand using elements from several different recipes.
I was cleaning out the fridge today and figured I'd make a good soup with what was left in the vegie bins. This turned out great!
The nutritional values have been calculated based on my selections of bread and cheese. We had this at our "Lunch Club" at work and it was delicious.
