This soup can be served for lunch or as main course for dinner with a salad and bread sticks.
I just threw this all together and played around with the amounts of "stuff" until it tasted good, so this is an estimate of what came out when it was all said and done. Tasty!
Rich, creamy broth, and tangy spices makes this a great soup for fall and winter. You can add more chili, a dollop of low fat sour cream, chopped cilantro and another sprinkle of chili powder to spice it up a bit!
3 cans Great Northern Beans (rinsed and drained)
2 c chicken breast diced and cooked
2 med onions chopped
4 cloves garlic, minced
2 tsp cumin
1 1/2 t oregano
1/4 t ground cloves
1/2 tsp cayenne pepper
6 c Wyler's No sodium chicken bouillon
1 can green chile's (optional)
In non-stick skilled, saute onions and garlic for one minute. Add spices and mix and saute for another minute. Add remaining incredients and cook and serve.
Put a dollop of sour cream and grated cheese on top of each serving (Not counted in Nutritional info. Tortilla chips are great on the side.
