I used up some left over pot roast beef and whatever veg I could find in the fridge. Turned out pretty good, I'll freeze servings and take it for lunch.
This is a delicious and hearty high protein salad which is great for lunch or dinner. If serving for dinner, place on bed of greens (not included in calorie count)
This is so so filling, so so delicious, and so so vegan! Nearly 20g of protein and nearly 20g of fiber...you'll be set!! :)

A batch of these whole-grain burritos in the freezer will serve you well on busy mornings. They’re wrapped in parchment paper before they’re frozen, so all you have to do is pull one out and warm it (still in its wrapping) in the microwave for about 3 minutes—and voila, you have a hot, cheesy, filling breakfast that’s good to take on the go.
