I made this on the stove with what I had in the refrigerator. You can add or swap other veggies. You can probably also make it in the crock pot.
A twist to this recipe is to add broccoli and turkey bacon. I made it up as I prepared it. We liked it so much I decided to enter it here.

you can find Tofurky and Vegenaise at most health food stores. they even sell Tofurky slices at Trader Joe's now.
the nutritional info is for Vegenaise, but you may sub whatever condiment you prefer.

note: i use LIGHT firm tofu in place of regular firm tofu because it's significantly lower in fat and calories without being lower in protein. i find that by the time i add olive oil and the spice mixture, i cannot tell the difference between the light and the regular.
Using up leftover spinach dip never tasted so good! Eat with crackers or in a sandwich, or with raw vegetables.

This is a summer favorite for me. Cool and light with a little sweetness. I will usually eat in a pita or in a soft hotdog roll. Or even eat half a serving with crackers as a snack, I use imitation meat because crab is so expensive but you can use either or even Lobster. YUM!!!!
This basic crepe can be filled with anything you want. I like low-fat cottage cheese for a post-workout meal. It can easily be scaled to make more and will work perfectly.
