I make and freeze these for on-the-go breakfasts. Can pop a couple in the microwave as needed. These could be even healthier by making ingredient adjustments (I calculated using what I had on hand.)
This recipe was adapted from one I found on the internet. I add mushrooms (sliced whole mushrooms) to my sauce for added flavor. Some folks may way to add red pepper flakes to spice this up a bit.

Then cook the vegetables green peppers, onions, hot peppers,mushrooms in olive oil for sauting do not over cook vegetables.Then make gravy mix in the vegetables. Then serve went the steaks are done.We put the vegetables on top of the meat.

We like the Oxtail kinda like a really thick stew and a bit spicy. But you can leave out some of the hot pepper if you don't want it spicy. We serve it over sticky white rice and with fried yellow (sweet) plantains.
Inspired by a turkey meatloaf recipe from Real Simple. I substituted turkey for ground sirloin, breadcrumbs for oatmeal and reduced sugar ketchup instead of regular ketchup to make it more South Beach friendly.
