These are very simple, easy and freeze well. You can make ahead and microwave individual portions as desired. You can substitute (or add) bacon, ham or along with peppers, spinach or whatever you desire (or have on hand).
Thai inspired pork, basil and eggplant stir fry. Of course, you can sub chicken or tofu for the pork. Use chiles to taste.
This is just a quick, tasty, throw-together meatloaf... I would say it's low-carb, because the 1 bread roll is spread out through the entire meatloaf - but for you die-hard non/low-carbers, perhaps you can find an alternative - in the past I have used wheat-germ in a lesser amount as an alternative - or dark wheat bread.
In my opinion - this is best served with garlic and dill mashed potatoes and young peas (the ones in the silver can ''Lesuer early peas'' mmmm THEY ARE THE BEST - HANDS DOWN)... Now that's certainly not low carb - but it's all tasty.
Saute onion, peppersand celery in oil. When softnedand ground beef and brown. Drain and add remaining ingredients except beans. Bring to a boil and simmer 1 to 1 1/2 hours then add beans and heat until all is heated through. Enjoy

A really yummy beef and broccoli that is way better than take out. It is much healthier too. I typically serve over quinoa, but rice would work too. (Neither is included in the nutrition info.) I am still experimenting on ways to decrease the soy sauce. You can simply decrease the amount used, but it would decrease the marinade amount.
I like to do all my prep work before hand so I can just add these ingredients and make breakfast in less than 5 minutes. Which is awesome on during the week. I know me and my son get a good breakfast and it doesn't take much time!
