Use any vegetables you like, but pumpkin and potato are a must. I've listed the vegetables that were in my fridge at the time I made the recipe. Use the type of seasonings that you like. Fresh herbs would be very good, but not available where I am. Can be made in a crockpot too.

This is by far my favorite chili. These are the quantities I use to make a double batch. Any leftovers you may have are great in enchiladas. Recipe also freezes well.
Make sure you use the McCormick mix. The generic brands don't taste quite right.

You can use a can of Skyline or Goldstar chili. I prefer the cans of Skyline and the pouches of Goldstar, but use what you've got.
Consider using Low Sodium Soy Sauce to reduce sodium content.
Use more water and/or corn starch if you like more gravy or a thicker sauce.
Try other asian vegetables according to taste or for variety.
I mince carrots and celery in a Handy Chopper, as smaller pieces soften more quickly which reduces cooking time, and because my picky son doesn't pick out the smaller vegetables!
I substitute bison for extra lean ground beef for extra flavor and less fat and calories. I also double the recipe and freeze the leftovers for a quick meal. I also prefer to add more vegetables than what the recipe calls for, so feel free to "doctor" it up the way you like!
