I wasn't able to find Greek seasoning at the grocery store bu here is a recipe for it. Take 1 tsp. thyme, 1 1/2 tsp. oregano, 1/2 tsp. marjoram, 1/2 tsp. basil, 1 tsp. mint, 1/2 tsp. dried minced onion and 1/4 tsp. dried minced garlic. Mix together in a bowl and store.

Substituted: EGGPLANT for Mirliton, omitted bacon, used egg whites for whole eggs

This is a salad I had a wedding and loved. I tweaked it a bit to be more diet-friendly. This can serve 1 as a meal alone, or two as the beginning course of dinner.
This is a great way to use vegetables that may have been sitting around in the refrigerator a little too long. Add or remove other vegetables, too (i.e. peppers, mushrooms, etc.).
Very fast and easy. You could also use smaller salmon filets. I always use the frozen, individually wrapped salmon.

This is one of the few Cuban dishes that is a little spicy, rather, it is redolent with garlic and tomatoes and the succulent flavor of fresh-caught shrimp. As all Cuban favorites, it is served with white rice and either ripe or green plantains. Add a green salad and garnish with some cilantro and you're good to go. Delicious!
