Just tossed a bunch of stuff into my pan and I came up with this dish. Definitely will make this again! It's sweet and spicy!!!
The coconut oil that is absorbed into the fish is accounted for in the nutritional info in this recipe.
This recipe can be made in about 2 minutes. Great lunch. Serve with crackers or a slice of sprouted grain bread. Or in my case, some Paleo bread.
Adapted from a recipe I found in a First Nations cookbook. Just add some veggies for a complete meal.
Depending on the thickness of your fish, it may take longer to cook. Make sure the fish is almost done before you put the Parmesan cheese mixture on, so that by the time the cheese is browned, the fish will be done.
