Wonderful Asian inspired meal. This is a Nigella Lawson recipe tweaked to our liking. Beautifully dark, sweet, and salty. Amazingly satisfying.

If you are making the Basic Couscous recipe (included) add an additional 10 minutes to the prep/cooking time.

Recipe is changed from a standard cream sauce and vegetables are added to make this more appropriate for a diabetic diet. It is still high in fat and protein, but by using olive oil instead of butter and cornstarch instead of flour, some calories are reduced and nutrients improved. I make this for four and freeze what isn't used.
This is an excellent variation to a classic southern meal, it reduces the calories by using seafood while still providing the spicy meal that is expected of a Jambalaya.
