Wanted to use up the portabello mushrooms I had, but didnt have crab meat, so went through the cabinets for what I did have on hand.
This delicious chowder is easy and quick to fix. I usually use haddock or striped bass in mine, but you can use any firm white fish--I have even made it with farm bred catfish!
I had a craving for garlic and had zucchini, TONS of tomatos and garlic sitting around, and whipped this up. More carb conscious than heart conscious, but modifications can be made easily to suit your needs. Also, this is VERY easy to increase servings for.

Fast and easy, this is reminiscent of the Impossible Pie created by Bisquick. It can be assembled and frozen in a zip-lock bag. Just thaw in refrigerator, and bake as directed.
