Blueberry Banana Protein Muffins
This is a healthy, high protein, low calorie moist muffin. This was adapted from DUCATI77's Protein Whole Wheat Blueberry Muffins. This turned out to be moist but a bit lower in sugar for my taste. Also, hubby thought it needed more banana flavor. Next time, I would up the brown sugar to 1/2 cup packed and add 1 more mashed banana and possibly 1 tbsp olive oil to make more moist. Overall a decent healthy snack or breakfast on the run.
