I love tuna and I wanted to figure out a healthier way to make it. Instead of the mayo in it I figured cottage cheese is good in everything so I tried it. It may have a weird texture but I think its almost as good as the real thing.
This easy dish is also delicious with Italian sausage, but to cut back on calories I've substituted shrimp. Boneless skinless chicken breast tastes great with the pesto as well.
2/3 c sour cream
1/4 c mayo
1.5 tsp reduced sugar ketchup
3 tsp creamy horseradish
3/4 tsp ideal sugar
1/4 tsp each of paprika, salt, dill weed
1 dash black pepper and cayenne pepper
A crab and cream cheese mixture that can be used as a wrap or with crackers
Cut zuchinni in half and microwave for 3 minutes.
Scoop out pulp and add to all other ingredients except shredded cheese in small bowl.
Add lemon juice and salt and pepper to taste.
Fill zuchinni 'boats' with mixture.
Sprinkle shredded cheese on top.
Broil in oven until cheese is light brown and bubbly.

tamarind water can be used in place or 1 tbsp of lime juice and equal amount of dark brown sugar in place or molasses.
