Your family and friends will never have a clue that this is gluten free cake. They will never know that it is a mix, right out of a store-bought package - unless you confess! It is soft, moist, delicious and amazingly addictive.

Super easy! - from Mrs. Fred Valentich, given to me by Winnie Pandol. They make this in the office from time to time. Yummy! Mrs. Valentich says " This is not my original recipe but it's one of those that gets handed around over the bridge table, across the fence or over a 10 o'clock cup of coffee. But it's so delicious. My family loves it. And it's so easy to make." And we love it too! - Beware, this *is* the type to make you lose control, so only make this when you know it is going to get eaten and have no leftovers!
This is wonderfully rich and tangy, but should be eaten only occasionally for special occasions since it is so high in calories.

This is a Lasagna type dish, use the eggplant in place of the noodles. Very yummy. Be sure to slice the eggplant thin, and consistent so they all are done together.
This great, quiche-like pie is my go-to recipe for pot-lucks and parties. It is also good with some bacon, broccoli or other vegetables added to it.
This is a meat and dairy free lasanga, using roasted cauliflower ricotta, pumpkin (winter squash), spinach, mushrooms, tomatoes, eggplant, herbs and olives! Be warned, you will need a large pan. This is loosely adapted from a recipe in Appetite for Reduction. It takes a while, but it's worth it, and a lot of the time is not time you need to actively participate in the cooking.
Next time I make this I will use firm, rather than extra firm tofu, as I think it could do with more moisture in the ricotta.
