Potato salad using drained nonfat yogurt. Draining the yogurt removes most of the whey, which takes away a lot of the sourness. In the alternative, you can use "Greek" yogurt, which has already been drained. A minimal amount of mayonnaise is used to add creaminess.

Although I have to say that if I used all of this on one bag of spinach, I would not eat it. Therefore, I put it in a mason jar and use it 1 tablespoon at a time for my salads, and it lasts a LONG time. It's a great recipe! I add clementines and strawberries, or whatever other fruit I'm craving or have on hand and it's a great combo.

This is a great colourful easy salad for a starter or a main course. Just adjust the quantities to get the right fit. Make it upto 12 hours in advance and chill until you need it.
I just mixed this all together for dinner one night, and it's pretty good! I spooned it onto sliced bread, but I think it would be really good stuffed into a pita.
If you mix together while the rice/bulgur is still warm, and serve over lettuce leaves, this is a satisfying winter salad.

When using provided carafe switch the water line for olive oil and the oil line for water no carafe follow the ingredient list
