This is my lighter but just as delicious version of an oriental dressing from one of my favortite restaurants. Enjoy!
The vegetables in this can vary widely, as can whatever seasonings are used. These are just my current preferences. The Hidden Valley Ranch Salad Dressing Mix packets add a total of about 27 calories per serving, so should you pick an alternative seasoning, adjust your numbers accordingly.

Easy to fix; keeps for weeks in fridge. I eat it by itself OR with greens and other salad fixings. Could probably add cheese if desired.

This is a salad I had a wedding and loved. I tweaked it a bit to be more diet-friendly. This can serve 1 as a meal alone, or two as the beginning course of dinner.
Fortified grain pasta (Rotini) is used to bump up the fiber and protein content in this fresh pasta salad. Barilla Plus pasta offers a great choice that is milder in taste than a wheat pasta.
The pasta salad can be 'dressed' with a variety of low/no fat dressings, depending on your preference.

This is a great little salad for dinner or lunch. Its not small. Love to eat this one with wheat crackers.
