This was easy to make and store as a convenient packed lunch. It was a good way to get my "veggie fix" for the day.
This is a versatile side dish that pairs well with roasted or grilled pork, turkey, or chicken. This recipe serves 3 if you have another side vegetable. Only ~100 calories!!
If you don't have coriander or anise, you can substitute with other spices you have on hand! Using cinnamon and/or nutmeg makes a nice alternative, just give it a taste before you throw it in the fridge!
This recipe is from mustardmuseum.com and it calls for "Dulcet Cuisine Madras Curry Mustard" ... if you cannot get that, I made this with honey mustard into which I stirred curry powder.
AFTER mixing it all together, I seasoned to taste with salt, cayenne pepper and black pepper before topping with the grapes.
