This is the meal which i eat at least 3 times a week after a workout at the gym.
It is really tasty and high in protein. It fills you up for at least 4 hours.
I like to drink wine with it.

Small yellow, white, or red potatoes are best for potato salad. The potatoes maintain their natural moisture and sweetness this way. If you’re in a pinch, you can chop the potatoes, just remember they well take less time to cook. Adding fresh herbs are a nice touch – we like to use a combination of chopped parsley and dill. Parsley, dill, chives, tarragon and cilantro all work well. Add about 2 tablespoons of herbs at first then add more to taste. Dill and tarragon are strong, so you may not need the whole 1/4 cup.
You can substitute feta for ricotta if you prefer but calculations may be different.

In the summer I like to go crazy with the fresh vegetables..... Every one has cook outs and this is really easy to make and pretty to view! When the tomatoes ripen I then add them to salad as well. That's the great thing about this salad, any fresh vegetable works!
I use olive oil as it compliments the vegetables nicely when mixed with a Italian red wine vinegar. Fresh herbs are best, but dried works well.
This dish could be used as main dish by adding sliced peperoni, feta cheese, hard salami, etc..... adjusting calories and portions accordingly.
This is a sweet, fresh version that you can really pile on a salad (not just 2 TBSP) for only 150 calories and 10 grams of carbs. Yummy!
1 lrg Avocado
2 tsp fresh Lemon Juice
1/2 cup Fat free Greek Yoghurt
1 tsp Hot Sauce
1/4 cup extra Virgin Olive Oil
2 Garlic Cloves
3/4 Tsp Salt
Water as needed

this is a sweet salty vinegary cole slaw that is very refreshing. You can probably cut back on the oil by half. Original recipe called for vegetable oil, but I like olive oil better.

If you like pico, and a little heat, you'll love this one. For more heat don't take out the white part inside the jalapeno, or add more. Keeps in the fridge for about 5 days.
This is a quick throw-together that can be used as a heavy salsa dip, or a salady side dish. You could do it with rotel, but I like the extra flavors using Tostito's Splash of Lime Salsa (mild) instead.
