A bright summer salad that's quick and easy to make!
This is on of my family's favorite summer recipes. I serves 8. But we pig out and eat more often! Even if you double the serving size, you will consume less than 200 calories. If you use lite dressing, you will save more. Cheese crumbles or tiny cubes of chicken can be added to make an entree. Best part, for summer, no cooking.

High protein, high fiber and lots of taste in this cooked barley, split green pea and red lentil salad with oil & vinegar, spices, veggies, raisins/cranberries. Add grated cheese or crisply cooked bacon or a chicken breast for a full meal.
Start with lettuce, add ham & turkey. Top w/cheese, tomatoe & crumbled bacon. Slice egg into quarters and place on top.
