This dressing is the jam! Great on salad and also as a dip for vegetables. This recipe makes enough dressing for two salads, so be sure to save the extra.
Not really crazy about traditional Waldorf Salad; so created a variation I LOVE! I'm not a "measurer" so hope these work.
I usually like to make this with black beans, and sometimes without garbanzo beans, but I based this on what I had on hand this time. I also like to use "Fiesta Tomatoes" I find at ALDI, but substituted tomatoes with chiles, which have a bit more kick.
This salad I decided to make as I had left over pasta. I needed to also add to my fiber & protein to my diet. This way I get everything in it that I like & is healthy.

This is something I just through together, being I was craving Veggies. It is a nice healthy snack or just something for lunch.
On the beans. I cook then well in advance and freeze them in containers for later dated. It works out so you don't have to do them the same day.
Great salad - takes about 20 mins to prep - and then CHILL in fridge for an hour.
This is great with chips, or on a grilled burger or chicken breast - yummy! You can even put a be scoop on a bed of your favorite greens for a salad.
