You can lower the amount of calories in this dish by using low fat cheese and/or changing the type of cheese used.
**NOTE: The serving size may be large, I haven't actually measured out the servings. This obviously factors into the calorie count
This is my mother's nacho cheese dip. It's not a low calorie recipe, but it's delicious and fine in moderation. You can lower the calorie content by using skim milk and it wouldn't alter the taste much. You could also use the 2% Velveeta.
This recipe is taken from page 230 of Cook This, Not That. You can save calories by omitting the ham or substituting center cut bacon (or turkey bacon) and also by using reduced fat cheese.
