This is a great soup to make in the fall and it freezes well for a special treat in the winter! Use low sodium broth in order to cut down on the sodium, or it you are adverturous why not make your own!! The flavours are fabulous!!!
2lbs of chicken, 2cups of Basmati rice, 1 large onion, 1/4 cup olive oil, 1 large tomato, 1 tbs salt, 1tsp pepper, 1tsp turmeric, 1 tbs saffron, 1 large bell pepper, 2 carrots, 2 white potatoes, 4 bay leaf, 5 cloves, and 1tbs minced ginger.
