Pumpkin Nut Spice Cake
One day, I decided I'd add a can of pumpkin to a spice cake mix and see what happened. It was good, so the next time, I added pecans and ground flax seeds. Tonight, I substituted unsweetened applesauce for the oil. I sprinkled brown sugar on the batter in the pan and sprayed butter spray on top of that. I ate a piece warm from the oven with a huge squirt of whipped cream. It was wonderful! (My favorite way to finish this cake is to poke holes in it with a wooden spoon, then heat a can of cream cheese frosting in the microwave and pour it on top--but I'm trying to be healthy, and the whipped cream was not bad!)
