Add practically any veggie, the main difference from this breakfast a dinner fry is the tofu is crumbled, not cubed. You can add salsa (mix in, or serve on top) for a more Mexican variation. BTW, there are boxed "tofu scramble" mixes from Fantastic Foods -- these are OK, but salty.
