Nutrition & Calorie Comments  

Yum! Only had 2 bananas, so I added about a 1/2 cup each lowfat vanilla yogurt and applesauce, an extra 1/2 cup or so of flour, & 1/2 cup pecans. I made 6 muffins and 1 loaf of bread from it. Really moist for whole wheat! Next time I'll add some spices (cinnamon, ginger...mmm:)
This was a fantastic recipe! I did alter it a bit. Instead of two eggs I used 1/4c egg start and 1/4c applesauce. Instead of 1/2c butter I used 1/4c Smart Balance and 1/4c olive oil. I used 5 bananas and instead of salt I used potassium substitute. I also added a pinch of cinnamon. Fantastic recipe!
