It was a success at home! Dad, mom and the bros all had seconds. My changes: olive oil ,only green pepppers, no celery,no carrots and no flour. Most changes based on low carb needs. I might try adding some garlic. Thanks a bunch for sharing. It taste pretty yummy and filling
Delicious & nutritious. Great for our cold weather. I substituted Extra Virgin Olive Oil for the sweet unsalted butter and added some zuchinni, golden neck squash, & 1 C. frozen corn kernels. Also omitted the 1/4 flour . . . didn't feel we needed it. Our family loves this soup!
