I made this according to your recipe, and it was delish.. I did add 1 tsp of cream cheese to the center of the batter before baking... My husband went nuts over them and took them to his bowling team.. I love that it is low fat and still wonderful. I have to make more....
I agree with all the other comments. I used Splenda blend for baking, and it's 65 calories per cupcake. They are quite small, but if you just need a little something sweet, this will work!
I made this for the fourth of July and it tasted good, kinda like a sugar cookie, but the texture was super heavy and thick and it didn't really rise, it was very moist though. I had to triple the recipe to fill a 9x11 pan. I will make it again, but probably as a fruit pizza base or cup cakes.
I made this with Splenda instead of sugar so it was even less calories. :) It was very moist although I thought it was closer to a muffin in taste and consistency. I put Cool Whip on it but it's just perfect plain!
