Wow! I had 0% hope for this recipe but thought I'd try it anyway and I'm so glad I did- it is a WONDERFUL substitute for pancakes on my low carb diet. Very simple and delicious!
I mixed it up a bit and used cinnamon dolce sugarfree syrup from starbucks in my batter as well as some hazelnut extract, both of which helped it to be even more delicious! I added fresh blueberries on top along with sugarfree maple syrup! Definitely going to have to make again!
