Pumpkin-Sweet Potato-Peanut Butter Spread or Dip
I love the Three-P-Soup recipe in my "Simmering Solutions" slow-cooker cookbook and I wanted to see if I could use the ingredients to make something else flavorful. The following recipe is the result of my efforts. Tasters immediately asked for the recipe! Feel free to add more peanut butter, mustard and/or nutmeg according to your palate.
Serve this with vegetables, on crackers (it would taste great on Trader Joe’s Rosemary Raisin Crisps), sliced apples or on slices of a baguette. You can feel good about serving this to guests who may be trying to lose weight, as the amount of calories per serving is lower than many dips and spreads. Those who are committed to eating mostly whole foods and cleanly will love it as well. It would be great to serve for a Thanksgiving or holiday appetizer.
