Really good and easy! I used Butler's soy curls (instead of the TVP) and low-sodium black beans. Yum!

I have to agree with the other reviews, this is a great recipe. I used dry beans and added 2 additional cups of water. Still cooked it for 4 hours on high and it came out perfect. Because I didn't use canned beans, I probably should have added a touch of salt. I used Newman's Own Mild Salsa.
I used only "Taco Seasoning (Low Sodium Substitute)", submitted by APRILDAWN678, Morning Star Crumbles and salsa in small crockpot for 4 hours. Added it to the cheese enchiladas I was making and it was amazing! My very picky husband ate the rest of the mix with corn chips-
